Labor Day Chicken

The title says it all, but Labor Day Chicken is truly a mouthwatering and simple recipe to make for your next Labor Day party. Actually, you don't have to wait for Labor Day to bbq this chicken, It's good any time of the year and for any kind of occasion. It cooks up nicely and you'll be surprised at how fast it gets eaten up!

What you'll need:

- 2 pounds chicken thighs

- 1 (16 ounce) bottle zesty Italian dressing

- 1 (16 ounce) jar salsa (mild or hot)

First thing to do is marinate the chicken. You do this simply by placing the chicken in a nonporous glass dish or bowl and then pour the dressing and salsa over the chicken, turning it to coat. Cover with a lid or aluminum foil and refrigerate to marinate for at least 2 hours, or better yet, overnight. (I love it when you can prepare food ahead of time and it enhances the flavor!)

Next, preheat the oven to grill or broil, depending on how you want to bake it.

Remove the chicken from the dish or bowl and discard any remaining marinade. Grill or broil the chicken thighs for about 20 minutes or until cooked through and you see that the juices are running clear. Then, serve it immediately. How easy is that?

This recipe can be used as an easy appetizer recipe or for a main course. Either way, your guests will love it.
